At Markellos Bakery, one oven turns out Greek cheese and spinach pies, Mexican conchas, and Guatemalan bread - sometimes within the same hour. The family bakery has been baking in Chicago since 1982, and every 20 minutes another warm batch comes out.

Three culinary traditions share one oven here - crusty bolillos and soft conchas sit alongside Guatemalan bread and flaky Greek pies, a combination you won't find at most bakeries.

Custom orders include Tres Leches cakes soaked through to the center, Bundt cakes in a handful of flavors, and boxes of European cookies, from Italian butter cookies to delicate vanilla crescents.

Any celebration, from a wedding to a birthday, can be built around a handmade cake baked from a family recipe now in its second generation.
